Eggplant Skillet
  1. Heat oil in large skillet.
  2. Add eggplant, onions, pepper, tomato, water, salt, allspice, and sugar. Mix well.
  3. Cover and simmer until eggplant is tender, about 20 minutes. Add additional water, if needed.
  4. Serve hot and enjoy. Good over rice.
